What’s Up Wednesday

It’s been a long time. A really really long time. I’m planning to do some posts about our time in Uganda, but I need a little break from all things Uganda for a minute.

So instead of giving an in-depth update on what happened over the last 3 months, I’m going to do a link up today. I’m so tired and my brain is so fried, I need a writing prompt, and this one is perfect :).

What we’re eating this week:

Well, we have some really sweet friends who have made us dinner pretty much every night since we’ve been back. Tonight is the first night I actually cooked something, and I’ve got a freezer full of meals from friends for the rest of the week. We are so thankful for all the support from our friends here and that we can spend the next couple of weeks focusing on getting settled in with the girls rather than scrambling for dinner.

What I’m reminiscing about:

My parents being here last weekend.

We had so much fun with them. Now more than ever I wish they lived close to us and could see the girls all the time. The girls really love their jjajja and papa :).

What I’m loving:

I’m not going to lie, I’m loving pretty much everything about America right now. Having a washer and a dryer?! More than one skillet?? The ability to hop in the car and go wherever I want whenever I want? My comfortable bed?!?! It just all feels so wonderful. But mostly, I’m just reveling in being in our home as a family of four. It has been better than I even imagined.

What we’ve been up to:

Well, besides traveling back from Uganda (oh, and being there for 13 weeks!), we’ve basically just been spending lots of time reconnecting with friends and trying to get into a routine with the girls.

What I’m dreading:

Going back to work Friday. Boo! Since we were in country so much longer than we thought we’d be, I used all my maternity leave (and then some…) so I’m headed back this week. Thankfully, I’m able to go back just a couple days a week until we all kind of get used to our new normal. And as much as I’ll hate leaving my kids, I am so excited to see my work friends and to get back to nursing!!

What I’m working on:

Um, unpacking suitcases. It’s been a week but I still have 2 that need to be unpacked and sorted through. I guess this could fall under the dread category as well because I get a sinking feeling in my stomach every time I think about them. I did manage to tackle the mountain of laundry today, so that should help clear some space for the stuff that’s left to unpack. This is seriously the least fun part of coming home.

What I’m excited about:

Everything! We’re really looking forward to introducing the girls to all the things we love in Durham. We will also have some family visiting in the next couple months, and we’re excited about that.

What I’m watching/reading:

I’m on book 4 of the Outlander series (Drums of Autumn), and I’m just loving the books!

We tried to watch the TV series, but um….whoa! We quit after 4 or 5 episodes.

What I’m listening to:

Always Audrey Assad. Right now I’ve the Audrey Pandora station playing. So much good music on that one, I’m loving it.

What I’m wearing:

My clothes!!! Seriously, I was weirdly happy to be reunited with my clothes. And they feel so clean!

I also ordered this shirt (mine says something different) from Sevenly before we left and I’ve already worn it 3 times since we’ve been back. It’s so soft and so comfortable, and the proceeds go toward ShowHope, which supports adoptive families through education and grants. All around, love :).

What I’m doing this weekend:

Working, unfortunately. We might also venture to church on Sunday if we’re feeling especially spunky ;).

What I’m looking forward to next month:

My sister visiting and possibly going home to my parents’ house for Easter! I’m so excited to spend time with my family and for my sisters to meet the girls.

What else is new:

Literally everything is new. Our life is totally 100% different than it was in November. I’m loving it, though :).

What is my favorite Easter tradition:

You know? I don’t really have an Easter tradition. I love going to our church’s Easter service, but other than that, we don’t really ever have grand plans. My mom told the girls she would have an Easter egg hunt for them this year. I’m pretty sure they had no idea what she was talking about. It will be fun to have kids around this year, though. Maybe we’ll start some new traditions!

Summer Meals We’ve Been Loving

I think I mentioned before that I was in a meal rut this summer. I’m not sure why, but summers always prove a little hard for me to make a meal plan and stick to it. Maybe it’s the more spontaneous nature of summer? I’m more likely to say yes to something that comes up last minute around dinner time. The sun is still up, it feels like it’s still time to play. I think one of the other issues is wanting my food to be a little lighter. Heavy foods that cook all day in the crock pot just don’t seem appealing to me. And usually if I don’t plan ahead, there’s not a lot of hope for dinner time. BUT, we have made some things (often repeatedly) that we really love this summer! I thought I’d share a few of the very best with you.

Sarah Peters told me about this recipe. It took me a long time to actually try it out for some reason, and I’m kind of sad I waited. They are amazing! My husband who would take a beef burger over a veggie burger any day, raved about it AND went back for seconds. That is a success in my book. This recipe is quick and the ingredients are super cheap. It also works well if you prep the ingredients beforehand and then form the patties right before you’re ready to cook them. Even easier! I love it :).

When I initially read this recipe, it seemed like these sandwiches required a lot of prep work. And if I’m going to eat a sandwich, I want it to be quick and easy. Making the sauce, and I suppose slicing the veggies take some time, but I promise you it’s worth it. Especially because once those steps are completed, you can keep making these sandwiches all week. Which you will want to do, because these sandwiches are so good.

Holy moly, these are good! The first time I tried them out, I made them as a side dish to some veggie enchiladas. When Corey and I started eating them, we totally ditched the enchiladas and polished these off. The second time I made them, they were the entree for our movie night :). They are that incredible, I promise. Instead of the cilantro dipping sauce, I finely minced a jalapeno and mixed it with some homemade ranch. Amazing! Seriously, give these a try.

Ok, these have a special place in my heart. The day after Corey and I got married, we headed out of town on our honeymoon to Jamaica. Corey kept the trip a surprise from me until after our wedding, so I hadn’t packed any reading material for a flight. We walked into one of those shops in the airport and I picked up a Martha Stewart magazine. During our trip, I flagged this recipe and Spicy Three Cheese Dip. The poblanos were one of the very first dinner recipes I tried when we got back. Every time I make them, I think about our honeymoon and that first summer together in this house. They always feel special, and they’re always delicious.

I’m Wearing Weary….

There’s this line from an Audrey Assad song* that I love. She says, “I’m wearing weary like it’s a second skin.” I’m not sure I can pin down a time where I’ve really felt like that. Until the last couple of weeks.

I’m feeling so run down. And more than just physically tired, I’m emotionally drained. I’ve been so worried about this adoption for so long. Work has been stressful and really sad for weeks now. When I’m at home I’m worried and scared about what is going on in Uganda. When I’m at work, I feel l like I have nothing left to give my patients and their families as they grieve. On my days off, I just want to sleep or sit at home and do nothing. But I’ve been forcing myself to keep doing stuff because staying busy helps keep my mind off things. And then I dread going back to work because I don’t feel rested or prepared to handle what I’ll face there. See this cycle I’ve created? I’m tired of being tired. (And whiny.)

Here is what I’m scared of:

Is this what being a mom is going to feel like? Am I just going to be running on empty all the time? Unable to give my best at home because I’m tired from work, unable to give my best at work because I’m preoccupied with what is going on at home? I guess that is just my fear in all of this. Maybe this isn’t a phase but a way of life from here on out. Someone tell me that’s not the case.

All this to say, I’m weary. And I’m not sure what to do about it. What I have done is lots of praying and reading and meditating on Scripture. Maybe it’s slowly making a small impact? It seems like it’s always easier to convince my mind than my heart of things, though.

For now, I’m going to get dressed, go to the gym, and then maybe to Rise because one of their biscuits can only help!
